- 1 small red onion, thinly sliced

Instructions
- Slice the knob rolls in half horizontally.
- Spread mustard or garlic aioli on each cut side of the bread.
- Layer on sharp cheddar, bacon or ham, red onion slices, and fresh greens.
- Add optional extras like grilled mushrooms or roasted red peppers.
- Press the sandwich gently together.
- Toast for 4–5 minutes if a warm version is desired.
- Serve warm or at room temperature with pickles or chips on the side.
Notes
Swap bacon for roast beef, turkey, or vegetarian fillings like grilled zucchini and hummus. Try with horseradish spread for a British twist or scramble eggs for a brunch version. Stays fresh when wrapped for picnics!
